Bacon Ranch Dressing To Make You Cry… Courtesy Of Pete And Mark

To our way of thinking, truly healthy food that also tastes freaking great is all about diverse chefs doing their special thing with awesome ingredients to fuel the body and fire up the tastebuds.

Case in point, the Bacon Ranch Dressing recipe below (featuring Primal Kitchens Mayo from our friend and advisor Mark Sisson) from Pete Servold of Pete’s Paleo, which crafts meals for Power Supply customers in Southern California (along with 5 other independent local chef talents). 

Pete was kind enough to make it for a group of us food and fitness lovers who came together to revel in just how awesome really good-for-you food can be. Bacon Ranch Dressing (yes it's really paleo)

Too often people assume that eating clean or eating paleo is too restrictive. That your life will just be steamed broccoli and grilled chicken breast. Well that's just not the case, with a little bit of kitchen chops and some effort there are tons of different things you can do to make delicious, healthy fare. This recipe is one to have in your back pocket moving forward. It will make anyone like kale and it's great as a dipping sauce for crudite, and like most ranch dressings can be put on just about everything. 

Makes about two cups good in the fridge for 3 days
1 cup Primal Kitchens Mayo
1/3 cup red wine vinegar
1/2 cup rendered bacon fat from paleo bacon like ours (Pete's Paleo Bacon - delivered to your door)
(Cut 1/2 pound bacon into matchsticks and cook on medium till crispy, strain fat and let cool slightly to use. Bacon can be served on salad with dish or used for something else.)
1/4 cup fresh chopped chives
Salt and pepper to taste
1 T minced shallot

Add mayo and red wine vinegar into blender. Turn on low to start and bring up to medium high speed. Slowly pour in bacon fat through top of blender, add shallot and lastly the chopped chives. Salt and pepper to taste. (The mayo and bacon have already been seasoned so it's best to wait till end to add salt and pepper based on preference)

And serve. Super simple, incredibly delicious and 100% paleo.
