Got inspired by Chef Branden's potato salad (on the PS menu in the Loco Moco meal) and wanted to share an easy/yum recipe for making your own when the food prep muse is with you. Recipe utilizes Primal Kitchen Chipotle Lime Mayo from our friend Mark Sisson. Great for complimenting any dish, even the Hawaiin classic - Loco Moco.

Deciding whether potatoes fit into your diet is ultimately a personal decision, but exactly how your body reacts to starch – in its current metabolic state, which, remember, is not set in stone – should be the major determinant.
Chipotle Potato Salad
Ingredients:
¾ cup Primal Kitchens Chipotle Lime Mayo
2 tbsp cilantro, chopped
2 scallions, chopped
½ red onion, thinly sliced
2 cloves of garlic, minced
2 lbs of Red Bliss potatoes
Salt & Pepper to taste
*No chipotle lime mayo handy? Use the regular Primal Kitchen Mayo, add 2 tbsp of fresh lime juice and a pinch of chipotle spice to taste.
Instructions: Dice potatoes into ½ to 1 inch cubes (your call), boil until soft enough to easily insert and remove a fork, but the potato is still holding together well, place in fridge to cool. Combine all other ingredients into a bowl and mix until fully incorporated. When potatoes are fully cooled, poor the mayo mixture over the top of potatoes and mix with your hands until just incorporated, then season with salt and pepper to taste.
