How to do Turkey the rest of the year

We’re all about the good-for-you spices and hope you learned some cool stuff in the previous blog post about their unique healing properties. And while we may not use them in their century-old ways, smudging them on muscle aches or blemished skin, we can at least incorporate them more into our food to reap the bennies.

 Super Curried Turkey and Apples in Lettuce Cups
Fam-friendly and fast enough for weeknights, this dinner tags every base for a home run. Warm curry, yes. Crunchy apples, yes. Earthy onions, yes. Savory turkey, yes. Bring on the fans!

Serves 4

Ingredients:
1 ½ tablespoons olive oil

1 lb. ground turkey

½ medium white onion, diced

½ teaspoon ground sea salt

2 Granny Smith or Gala apples, cored, peeled and diced

1 tablespoon curry powder

1 ½ cups chicken broth

Butter lettuce

4 scallions (white and green parts), coarsely chopped

Instructions: Heat the olive oil in a large skillet over medium heat until it shimmers. Add the turkey, onion, and salt. Cook until turkey is cooked through. Add the apples and curry powder. Stir well to combine. Add the broth and reduce heat to medium-low. Simmer until the turkey, onions, and apples absorb the sauce, about 12 minutes.

Place lettuce on 4 plates. Divide the turkey mixture among lettuce cups and garnish with scallions.

 


 

  Tamarind Turkey Meatloaf with a Galangal Tomato Glaze
Move over, meatloaf. A turkey-riffic medley of flavors – a little sweet, a bit sour, and a tad spicy – promises something for everyone in the family. The go-to answer to the “What’s for dinner?” question. 

Serves 4-6

Galangal Tomato Glaze Ingredients:
½ cup Paleo-friendly ketchup

¼ cup water

1 tablespoon organic honey

2 teaspoons grated galangal

Meatloaf Ingredients:
2 large eggs

¼ cup parsley

1 small onion, finely diced

1 medium carrot, finely diced

2 teaspoons tamarind paste

1 teaspoon ground sea salt

½ teaspoon freshly ground black pepper

2 lbs. ground turkey

Galangal Tomato Glaze Instructions: Combine all of the ingredients in a small saucepan and bring to a light simmer. Remove from heat and reserve.

Meatloaf Instructions: Preheat oven to 350 degrees. In a large mixing bowl, whisk the eggs. Add the parsley, onion, carrot, tamarind paste, sea salt, and pepper. Stir well to combine. Add the turkey, and gently work with your hands incorporate all of the ingredients.

Form the meat into a 9-inch x 4-inch loaf on a large, rimmed, nonstick cookie sheet. Brush with ½ the glaze.

Bake for 45 minutes, then brush with remaining glaze. Bake for 15-20 minutes, or until internal temperature registers 165 degrees with an instant read meat thermometer.

Let sit for 10 minutes.

Cut into thick slices and serve.
