Easy to make, hard-working tortillas/wraps

One of the things I missed most when I started avoiding flour was that paragon of versatility… the soft tortilla/wrap. From crepes, to burritos to soft tacos and enchiladas, a good wrap opens up so many tasty and easy to prepare goodies.  

But to be good, it has to hold up to a full cargo load of tasty filling items, weather the stresses of hand-held eating, and taste yum too. 

Inspired by the breakfast burrito from Chef Rachelle on the PS menu this week (so freaking good), I decided to fire up some burritos for the fam last night and work on my tortilla/wrap game. Net result? A fun and easy-to-make hit with the school night dinner crowd at Chez Morton. (Yes, that's our dinner below... pays to have an aspiring photographer daughter). 

I used this tortilla recipe from Stupid Easy Paleo. We were out of arrowroot (generally a must for any kitchen doing no-gluten baking/cooking) so I subbed with Tapioca flour. I like coconut overtones so used the coconut oil and bit of coconut flour called for in the recipe. But you can always sub olive oil and leave out the coconut flour. I’ve tried that as well and you get a more neutral, paler in color, but still yum result.   

Either way…dead simple and fast. Just whisk it all together, and cook up each one in a pan over medium heat like you would a crepe (pour batter, swirl to cover pan, about a minute each side).

Speaking of crepes, the great thing about these light little haulers is that they’re just as happy wrapped around sweet or savory ingredients.  My daughters are big crepe fans, so it’s great for the old man to be able to join in the fun on a Saturday morn with his sans gluten or dairy variant and get positive reviews from the wee ones. 

Once you’ve got your tortilla/wrap version down… there are tons of directions you can take too for what’s inside.  Last night's burrito inspired elements here at Chez Morton? Ground beef with sautéed onions and a dusting of cumin, chili powder and sea salt.  White rice (brown could work too), salsa, avocado, and scrambled eggs. 

Quick, easy, yum and resulting in happy children… which makes for a happy/relieved father.
