Ahh breakfast, for most of us traditionally a processed food carb-fest (sugary cereals, toast, bagels, donuts) that’s now one of the tougher nuts to crack on the eating-differently quest.
But fear not, even the breakfast beast can be tamed. Some tips/favorites…
- For your cereal jones – Almond milk to the rescue. This wonder substance is super easy to make (only tool you may not have, a nut milk bag for straining) and makes a great milk replacement. I make a batch on the weekend, then pour over blueberries, strawberries, bananas and walnuts a few mornings a week for a delicious, cold, crunchy, cereal-memory-erasing breakfast bowl (thank you Christy Ross). For you safe starchers out there, the occasional add of brown rice or quinoa adds to the party.
- Eggs many ways – Keeping some hard boiled on hand is a good idea. And scrambles take no time even on a weekday morn. For some variety, add spinach and/or other veggies in a pan with a pat of butter. Maybe a side of all natural salsa or some avocado. - Dinner is the new breakfast - Embrace eating foods not typically thought of as breakfast in the morning. Couple ways to do this. The most time efficient… straight up leftovers. Or when you’re a little less crazed, cook your protein and vegetables in a breakfast style. Some leftover meats, some vegetables, your fat (butter, maybe some coconut or olive oil) and a creative mix of some spices and you’re off to a nice breakfast change up. The spice and herb combinations possibilities are limitless – you just have to be a little daring and creative!
- Don’t fear the Ziploc – Some batch cooking time on the weekend really helps too. Load up a Ziploc or two with some cooked veggies, meats to adorn your eggs or for a standalone fry up. And while you may get an odd look or two, that grilled chicken you prepped can make a tasty and filling breakfast choice on the go.
