"Because no one else was. No one else was taking food from the farms and making it into delicious Paleo meals available to people nationwide, at an affordable price.” So sayeth Sarah Servold on why she and her husband Pete set out to build Pete's Paleo.
Pretty awesome founding idea and just one of the many reasons we're so fired up to have Pete's Paleo join the community of independent chefs fueling active folks with Power Supply in LA. Pete’s food is built on solid old school french technique using nearby farm/ranch fresh ingredients all with a Paleo spin. Sauces and spices are made completely from scratch for extra yum. You can literally taste that extra ingredient of passion in what they craft.
Building their business in a place like San Diego with local farms aplenty and a year-long growing season, you can see how great sourcing became such a passion. Says Pete... "With some farms we have an 'everything you grow we buy' policy. We allow our farmers and ranchers to dictate our menus. Our customers are eating the most fresh, seasonal food available.”
Already that ingredient love is translating into tasty delights on the Power Supply menu like Pulled Pork with Kabocha Squash and Brussels and for next week's lineup the Mediterranean Grilled Chicken with Tomatoes and Roasted Beets.
Now a little more getting to know the Servolds with a Q and A:
Q: When you’re not making delicious Paleo food, you are...
A: Enjoying CrossFit, Golf, Meditating, Reading and… does playing with new menu items count? We do that in our spare time a lot
Q: What’s your craziest inspiration for a dish/recipe?
A: Sun choke ice cream with fried bacon cubes
Q: Why Power Supply?
A: We are excited to join forces to be able to reach as many people as possible in the good food movement. It’ll be a great way to introduce Pete’s Paleo to a new audience
Q: Any final golden nuggets to share?
A: You can’t look like a million bucks if you are eating off of the dollar menu
There you have it folks. A new kind of Happy Meal is served, beautifully grown and perfectly picked veggies and meat from an animal that had a happy and yummy life.
One more thing before we go... BACON. Yes, if you didn't know Pete's makes their own and it’s said to be a life altering experience. As Sarah puts it, "Pete’s bacon is the meatiest, most supple, melt-in-your-mouth bacon you’ll ever have.”
Check it out and get some bacon.
Thanks Pete and Sarah for joining the rumpus.
